Through the years Cajun food has gotten a reputation for being too hot to enjoy. Authentic Cajun food is spicy but not hot. Simply throwing cayenne pepper on to a meal doesn’t make it Cajun; it just makes it unbearably hot. That’s not our style. The secret to true Cajun cooking is finding the right blend of many spices that will enhance the flavor of the food, not overpower it.
