How to Stuff Your Turducken
1. Prepare Stuffing Safely - Stuffing using raw meat , poultry or shellfish, should be cooked and refrigerated to 40 F before stuffing to reduce the risk of food borne illness from bacteria.
2. Stuff Loosely - Stuff the turkey loosely - about 3/4 cup of stuffing per pound. The stuffing should be moist, not dry, because heat destroys bacteria more rapidly in a moist environment.
3. Use a food thermometer - For safety and doneness, check the internal temperature of the turkey and stuffing. Your temperature must reach 165 F degrees. If not, further cooking is required until you reach this temp.
4. Let is rest - let the cooked turkey stand for 20 minutes after cooking. Enjoy!
